Meredith earned her Bachelors of Science in Nutrition from Pennsylvania State University and a Masters of Science in Nutritional Sciences from Case Western Reserve University in Cleveland, Ohio. There she also did her clinical/community Dietetic Internship at Louis Stokes Veterans Hospital.
She is a Registered Dietitian with the Commission on Dietetic Registration and is licensed through the The North Carolina Board of Dietetics/Nutrition.
Meredith has worked in the clinical setting, the outpatient setting covering topics such as diabetes, cardiovascular health, weight management and eating disorders and most recently in the food industry working to create and review food ingredient statements as well as assess product compliance.
Her areas of interests include:
- Mindful eating and intuitive eating--working towards becoming a Certified Intuitive Eating Counselor
- Weight management and eating disorders
- Pediatric food allergies and sensitives (IgE mediated and Food Protein Induced Enterocolitis Syndrome)
